Chef Yuji Sato

Hokkaido-born Yuji Sato has been a stalwart figure among the team at Hashida Sushi, having worked as a key catalyst for the Hashida brand name over the last five years. At age 43, he has dedicated more than half his life to perfecting his craft in the ancient and contemporary culinary arts of Japan, beginning with an apprenticeship at a Tokyo-based sushi restaurant when he was just 18.

Since then, chef Sato has traveled to various countries and regions to assist Kenjiro ‘Hatch’ Hashida in his overseas collaborations as an executive chef, gaining insurmountable experience and international exposure as chef Hatch continues to expand the Hashida Sushi brand name worldwide.

Chef Sato, a certified Food Hygiene Manager, also prides himself in being an artist both in and beyond the kitchen. He is highly adept at penknife carving and other crafts, and often applies his creative flair to the simplest of objects – from carving intricate designs onto bamboo leaves and vegetables, to hand-making leather wallets and shell jewelry.
